Sage belongs to the family Lamiaceae and the genus salvia, which comprises more than 20 species in our country.

HERBS&OILS cultivates organic sage of the species Salvia officinalis at an altitude of 700 meters in the Xirolimni area of Kozani.

The plant thrives in a variety of climates, at altitudes from 0 - 1,500 m, and on soils with a wide pH range (4-8). It has a very high resistance to low temperatures but grows better in sunny areas. There is a multitude of native sage plants at the foot of the mountain in our area.

Cultivation is initiated in the autumn at the HERBS&OILS nursery and, applying the proper care, may last for 6-8 years.

Harvesting for dry herbal substance is done when the plants start to flower, while for the production of essential oil the plants are harvested at full bloom. The plants are harvested in May or June, depending on the weather conditions in the area. The harvested parts of the plant (leaves) are conditioned in the shade by natural drying, which is completed faster than with other plants due to the low water content of the leaves.
